SipMX was born in Mexico City, inspired by the idea of experiencing the city sip by sip.

We create a space to share stories about cocktails, mezcal, bars, and Mexican gastronomy — not from the outside, but from within the scene itself. Our perspective comes directly from bartenders, kitchens, and the streets of Roma, Condesa, and beyond.

At SipMX, we believe that a drink is more than what’s in the glass. It carries the flavor of tradition, the rhythm of service, and the energy of Mexico City’s nightlife.

Through our tours and experiences, we bring together community, flavor, and culture, offering travelers a genuine taste of Mexico City’s cocktail and mezcal culture.

I AM MARIO ASAEL

I’m a proudly Mexican bartender.

For the past 15 years, I’ve been behind the bar in Mexico City — from some of the world’s best cocktail bars to humble neighborhood spots, where I often learned just as much.

As a bartender, I’ve been a witness to countless moments, a confidant to strangers, and a bridge between the liquid in the glass and the human experience.

What drives me is not just the drink, but the connection. I believe hospitality is a profound act — one that creates community, trust, and shared joy.

Beyond cocktails, I study Mexico City through ethnohistory, exploring how its culture, flavors, and people shape the present. I love the chilango spirit: its excesses, its blends, its contradictions.

SipMX is my way of telling those stories — from the inside, with no filters.
